Ingredients

  • 1 1/2 c. oil
  • 2 c. sugar
  • 3 eggs
  • 3 c. flour (all-purpose)
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 3 c. tart raw apples
  • 1 c. walnuts or pecans
  • 2 tsp. vanilla

Method

  • Combine oil and sugar. Blend very well. Add eggs, one at a time, beating after each addition. Sift together flour, baking soda, cinnamon, nutmeg and salt.
  • Mix into oil-egg mixture and combine thoroughly. Add apples and nuts.
  • Mix with spoon, then add vanilla. Bake in tube pan. Bake in a 325° oven for 1 1/4 hours. Remove from oven and let cool in pan while preparing glaze.
