Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 pinch salt
  • 1 pinch cinnamon
  • 14 teaspoon vanilla extract
  • 6 slices brie cheese
  • 1 cup real maple syrup
  • 18 cup toasted pecans, broken into small pieces
  • 18 cup diced banana
  • 12 cup strawberry (topping)
  • 1 cup fresh whipped cream (topping)

Method

  • Combine maple syrup, pecans and bananas and warm over low heat.
  • In a shallow baking dish, beat the eggs then add in the milk, salt, cinnamon and vanilla.
  • Make a slit in each slice of bread big enough for the brie to fit into, but do not cut all the way through.
  • Place the brie slices into the opening.
  • Dip the bread into the egg mixture and place on hot griddle.
  • Cook until browned on bottom, then flip and cook until browned on the other side.
  • After both sides are browned, transfer 3 pieces to individual serving plates.
  • Top with whipped cream and fresh berries.
  • Serve with warm maple syrup mixture.
