Ingredients

  • 4 c. thinly sliced onions
  • 3 Tbsp. margarine
  • 5 c. beef broth (may use canned)
  • 1 beef bouillon cube
  • 1 tsp. Worcestershire sauce
  • dash of pepper
  • 4 oz. Swiss cheese
  • 1/4 c. Parmesan cheese
  • 6 slices French bread, toasted

Method

  • In 5-quart Dutch oven, saute onions in margarine over low heat until onions are tender.
  • Stir in beef broth, bouillon cube, Worcestershire sauce and pepper.
  • Simmer for 20 minutes.
  • In medium bowl, combine cheeses.
  • Ladle soup into ovenproof bowl. Top each with French bread and top with 2 tablespoons of cheese mixture.
  • Place under oven broiler for 1 to 3 minutes until cheese is bubbly.
  • Serve hot.
  • Place bowls on cookie sheet for easy broiling.
