Ingredients

  • 1/4 c. butter or margarine
  • 5 c. thinly sliced yellow onions
  • 1 tsp. salt
  • 2 Tbsp. flour
  • 2 qt. beef bouillon
  • 8 slices French bread (1/2-inch thick)
  • grated Mozzarella cheese (1 1/2 c.)

Method

  • Melt butter in large saucepan.
  • Add onions and cook slowly for 15 minutes, covered.
  • Uncover, increase heat to moderate and cook about 35 minutes, stirring frequently and scraping bottom of pan until onions are deep golden brown.
  • Sprinkle with salt and flour and stir for 3 minutes.
  • Stir in broth and simmer, partially covered, for 35 minutes.
  • Toast bread slices.
  • Place toast in individual bowls.
  • Pour soup over toast and sprinkle with cheese (melt cheese in microwave).
