Ingredients
- 1 lb. bag 15 bean mix (throw away ham flavoring packet)
- 2 qt. water
- 1 (16 oz.) can stewed tomatoes
- 1 large yellow onion, chopped
- 1 garlic clove, minced
- 1 (4 oz.) can chopped green chiles
- 1/4 c. lemon juice
Method
- Wash beans; place in large pot.
- Add water to cover 2 inches above beans.
- Soak overnight.
- Drain.
- Add 2 quarts water and remaining ingredients, breaking tomatoes up with a fork.
- Bring to a boil; reduce the heat.
- Cover; simmer 2 to 4 hours, depending on how "mushy" you like beans.
- Makes 6 to 8 servings.
