Ingredients
- 2 boneless chicken breasts
- 2 qt. water
- salt and pepper (1/2 tsp.)
- 1 c. onion
- 1 c. carrots
- 1 c. celery
- 1/2 pkg. mashed instant potatoes
- 2 cubes chicken flavored bouillon
Method
- Boil chicken breasts tender; remove.
- Add bouillon cubes and set aside.
- Saute onion, carrots and celery.
- Add vegetables to broth (including the bouillon).
- Boil gently for 45 minutes to 1 hour.
- Add instant potatoes to thicken soup.
- May need to add more water.
- Chop chicken and add.
- May use a ham bone instead of chicken.
- Use same veggies and cubes of ham, but omit the chicken bouillon.
