Ingredients

  • 2 boneless chicken breasts
  • 2 qt. water
  • salt and pepper (1/2 tsp.)
  • 1 c. onion
  • 1 c. carrots
  • 1 c. celery
  • 1/2 pkg. mashed instant potatoes
  • 2 cubes chicken flavored bouillon

Method

  • Boil chicken breasts tender; remove.
  • Add bouillon cubes and set aside.
  • Saute onion, carrots and celery.
  • Add vegetables to broth (including the bouillon).
  • Boil gently for 45 minutes to 1 hour.
  • Add instant potatoes to thicken soup.
  • May need to add more water.
  • Chop chicken and add.
  • May use a ham bone instead of chicken.
  • Use same veggies and cubes of ham, but omit the chicken bouillon.
