Ingredients

  • 3/4 lb. French green lentils
  • 3 clove garlic
  • 1 clove garlic
  • 1/2 c. extra-virgin olive oil
  • Zest of 1 lemon
  • 3 tbsp. lemon juice
  • 2 medium carrots
  • salt
  • Pepper

Method

  • In a medium pot over medium-high heat, bring lentils, smashed garlic, and enough water to cover by 1-1/2 inches to a boil.
  • Reduce heat to medium-low and simmer for 10 minutes.
  • Add 1 teaspoon salt and simmer for 10 minutes more.
  • Turn off heat and let lentils rest in cooking liquid for 15 minutes.
  • Drain lentils and discard garlic.
  • Transfer lentils to a medium bowl and let cool slightly.
  • Toss lentils with remaining ingredients and season with salt and pepper.
  • Serve warm or at room temperature.
