Ingredients
- 3/4 lb. French green lentils
- 3 clove garlic
- 1 clove garlic
- 1/2 c. extra-virgin olive oil
- Zest of 1 lemon
- 3 tbsp. lemon juice
- 2 medium carrots
- salt
- Pepper
Method
- In a medium pot over medium-high heat, bring lentils, smashed garlic, and enough water to cover by 1-1/2 inches to a boil.
- Reduce heat to medium-low and simmer for 10 minutes.
- Add 1 teaspoon salt and simmer for 10 minutes more.
- Turn off heat and let lentils rest in cooking liquid for 15 minutes.
- Drain lentils and discard garlic.
- Transfer lentils to a medium bowl and let cool slightly.
- Toss lentils with remaining ingredients and season with salt and pepper.
- Serve warm or at room temperature.
