Ingredients
- 4 c. thinly sliced unpeeled cucumbers
- 2 c. thinly sliced onions
- 1 Tbsp. salt
- 1 c. water
- 1 small hot chili pepper (optional)
- 1 c. sugar
- 1/2 c. cider vinegar
Method
- In large bowl, combine cucumbers, onions, salt and water.
- Let stand 2 hours.
- Drain liquid and squeeze the vegetables by handfuls to extract more moisture.
- Add remaining ingredients and stir until sugar is dissolved.
- Spoon into freezer containers.
- Cover tightly. Freeze at least overnight before serving.
- Thaw 4 hours and serve. Makes 3 pints.
