Ingredients

  • 4 c. thinly sliced unpeeled cucumbers
  • 2 c. thinly sliced onions
  • 1 Tbsp. salt
  • 1 c. water
  • 1 small hot chili pepper (optional)
  • 1 c. sugar
  • 1/2 c. cider vinegar

Method

  • In large bowl, combine cucumbers, onions, salt and water.
  • Let stand 2 hours.
  • Drain liquid and squeeze the vegetables by handfuls to extract more moisture.
  • Add remaining ingredients and stir until sugar is dissolved.
  • Spoon into freezer containers.
  • Cover tightly. Freeze at least overnight before serving.
  • Thaw 4 hours and serve. Makes 3 pints.
