Ingredients

  • 2 Tbsp. oil
  • 1 1/2 lb. ground chuck
  • 1 large onion, chopped
  • 1/8 tsp. garlic salt
  • 1 tsp. salt or to taste
  • 1/4 tsp. oregano
  • 2 cans Ro-Tel tomatoes, undrained
  • 1 tsp. Tabasco sauce
  • 2 cans kidney beans, undrained

Method

  • Heat oil in large skillet.
  • Add meat and cook until brown.
  • Add onion and garlic salt.
  • Drain grease.
  • Add salt, oregano and Tabasco sauce.
  • Break up tomatoes and add along with kidney beans. Mix well and bring to simmer.
  • Taste for seasonings and correct if needed.
  • Simmer, covered, for 1 to 2 hours.
  • If mixture is too thick, add tomato juice.
  • When serving, sprinkle grated Cheddar cheese on top, if desired.
