Ingredients

  • 10 Soft-boiled eggs
  • 80 ml Soy sauce
  • 120 ml Mirin
  • 200 ml Sake
  • 1 tsp Sugar

Method

  • Make the soft-boiled eggs.
  • To learn how to make them, refer to.
  • Put the sake and mirin into a pot and cook off the alcohol.
  • Once the alcohol has evaporated, add the soy sauce.
  • Right before it begins to boil, add the sugar and turn off the heat.
  • Leave the pickling sauce to cool to room temperature.
  • (If it's hot, the eggs will continue to cook.)
  • Pour the sauce into a container and place the eggs in it.
  • Leave in the refrigerator for a day and they're done!
