Ingredients
- 1 1/2 c. boiling water
- 1 c. corn meal
- 1 Tbsp. margarine or butter, softened
- 3 eggs, separated
- 1 c. buttermilk
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- margarine or butter
Method
- Heat oven to 375°.
- Stir boiling water into corn meal; continue stirring until mixture is lukewarm.
- Blend in 1 tablespoon margarine and the egg yolks.
- Stir in buttermilk, salt, sugar, baking powder and baking soda.
- Beat egg whites just until soft peaks form.
- Fold into batter.
- Pour into greased 2-quart casserole.
- Bake until knife inserted near center comes out clean.
