Ingredients

  • 1 1/2 c. boiling water
  • 1 c. corn meal
  • 1 Tbsp. margarine or butter, softened
  • 3 eggs, separated
  • 1 c. buttermilk
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • margarine or butter

Method

  • Heat oven to 375°.
  • Stir boiling water into corn meal; continue stirring until mixture is lukewarm.
  • Blend in 1 tablespoon margarine and the egg yolks.
  • Stir in buttermilk, salt, sugar, baking powder and baking soda.
  • Beat egg whites just until soft peaks form.
  • Fold into batter.
  • Pour into greased 2-quart casserole.
  • Bake until knife inserted near center comes out clean.
