Ingredients
- 1 (3 oz.) pkg. lemon Jell-O
- 1 1/2 Tbsp. vinegar
- 1/2 c. mayonnaise
- 1/4 tsp. salt
- 1/4 c. celery
- 1 Tbsp. chopped onion
- 1 c. frozen spinach
- 3/4 c. cottage cheese
Method
- Dissolve gelatin in 3/4 cup boiling water.
- Add 1/2 cup cold water.
- Stir in vinegar, mayonnaise and salt.
- Cool until firm. Beat, then add spinach, onion, celery and cottage cheese.
- Chill in a 9-inch square pan and cut into squares.
