Ingredients
- 1 c. uncooked rice
- 2 1/2 c. water
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. shredded carrot
- 2 Tbsp. chopped parsley
- 1/2 bay leaf
- 1 Tbsp. salt-free butter
Method
- Heat all ingredients in a large saucepan to boiling; stir once or twice.
- Reduce to simmer, cover tightly and cook until rice is tender (15 to 20 minutes).
- Do not uncover during this time. Remove pan from heat and remove bay leaf.
- Fluff with a fork. Cover and let stand for 5 more minutes.
