Ingredients

  • 1 c. uncooked rice
  • 2 1/2 c. water
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/4 c. shredded carrot
  • 2 Tbsp. chopped parsley
  • 1/2 bay leaf
  • 1 Tbsp. salt-free butter

Method

  • Heat all ingredients in a large saucepan to boiling; stir once or twice.
  • Reduce to simmer, cover tightly and cook until rice is tender (15 to 20 minutes).
  • Do not uncover during this time. Remove pan from heat and remove bay leaf.
  • Fluff with a fork. Cover and let stand for 5 more minutes.
