Ingredients

  • 2 1/2 to 3 lb. sirloin, cubed
  • 1 (28 oz.) can whole tomatoes with liquid
  • 1 1/2 lb. sliced carrots
  • 1 1/2 c. sliced celery
  • 2 onions, sliced
  • 2 cans sliced water chestnuts
  • 3/4 c. sliced fresh mushrooms
  • 1 garlic clove, minced
  • 1 Tbsp. salt
  • 1 Tbsp. sugar
  • 3 Tbsp. Minute brand tapioca
  • 1/2 c. red wine
  • pepper to taste

Method

  • Mix all ingredients in a 4-quart casserole or Dutch oven. Cover and cook at 250° for 5 hours, stirring once or twice. (Ingredients and quantities can be varied to your liking.)
  • This can be prepared ahead of time but not frozen.
  • Serves 6.
