Ingredients

  • 1 bunch of cilantro (chopped)
  • 1/4 cup chopped red basil
  • 1 tsp dried whole leaf thyme
  • 1 tbsp whole leaf oregano
  • 1/2 bunch chopped parsley
  • 1 tbsp finely chopped rosemary
  • 2 tbsp garlic puree
  • 1/2 cup olive oil
  • 1 tsp liquid smoke
  • 2 tbsp cumin
  • 18 peeled and seeded tomatoes

Method

  • Combine all ingredients except tomatoes.
  • Peel and seed the tomatoes. I find a quick blanch in boiling water is the quickest way to do this. A few seconds in the water and the skin should come right off. Once the skin is off cut in half and remove the seeds.
  • Grill cut halves of tomatoes first. Mark them and turn, then baste. Mark them again, and remove. Chop the tomatoes and combine with the remaining ingredients.
