Ingredients
- 2/3 c. shortening
- 3/4 c. sugar
- 1 egg
- 1/2 tsp. vanilla
- 2 c. sifted enriched flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 4 tsp. milk
Method
- Cream shortening and sugar.
- Add egg and vanilla.
- Mix thoroughly.
- Sift dry ingredients and stir into creamed mixture together with milk.
- Roll dough 1/8-inch thick.
- Cut with large cookie cutter.
- Place 1 teaspoon mincemeat in center of each cookie.
- (I use None Such mincemeat by Borden which comes in a jar.)
- Fold cookies in half.
- Seal edges with fork.
- Bake in moderate 350° oven for about 12 to 15 minutes.
