Ingredients
- 4 qr. ripe figs
- 4 c. sugar
- 2 Tbsp. sliced orange rind
Method
- Wash figs and cut off stems.
- Place in a 4 qt. pan.
- Do NOT add water.
- Pour sugar over figs.
- Add orange rind.
- Cook one hour very slowly with lid on.
- Stir occasionally.
- Cook two more hours or until juice is dark and thick.
- Spoon figs and juice into jars that have been sterilized in boiling water.
- Place lid and band on jar and screw tight.
