Ingredients

  • 2 c. sugar
  • 3/4 c. shortening
  • 1 c. cold mashed potatoes
  • 4 eggs
  • 1/2 c. milk
  • 2 sq. chocolate or 2/3 c. cocoa in 1/2 c. hot water
  • 2 c. flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1 c. chopped pecans

Method

  • Cream sugar and shortening.
  • Add cold potatoes and eggs and blend well.
  • Stir in chocolate or cocoa mixture.
  • Sift dry ingredients together and add alternately with milk.
  • Stir in vanilla and chopped nuts.
  • Bake at 350° for 1 hour in angel food cake pan or 45 minutes in 2 small loaf pans.
  • Ice when cool.
