Ingredients
- 2 c. sugar
- 3/4 c. shortening
- 1 c. cold mashed potatoes
- 4 eggs
- 1/2 c. milk
- 2 sq. chocolate or 2/3 c. cocoa in 1/2 c. hot water
- 2 c. flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 tsp. vanilla
- 1 c. chopped pecans
Method
- Cream sugar and shortening.
- Add cold potatoes and eggs and blend well.
- Stir in chocolate or cocoa mixture.
- Sift dry ingredients together and add alternately with milk.
- Stir in vanilla and chopped nuts.
- Bake at 350° for 1 hour in angel food cake pan or 45 minutes in 2 small loaf pans.
- Ice when cool.
