- FOR THE SALAD:
- Olive Oil, As Needed
- 1 Gluten Free Pita, Cut Into Cubes
- 2 Ripe Tomatoes, Sliced
- 1/2 Cucumber, Diced
- 1 Pepper, Sliced
- 1/2 Red Onion Finely Sliced
- Salt And Pepper, For Seasoning
- FOR THE DRESSING:
- 1 clove Garlic, Minced
- 2 Tablespoons Lemon Juice
- 1 Tablespoon Olive Oil
- 1 Tablespoon Fresh Parsley, Chopped
Method
- Heat a drizzle of olive oil in a frying pan over a medium heat. Fry pita squares until golden brown. Set aside to cool.
- Make the dressing by whisking garlic, lemon juice, olive oil and parsley.
- Place tomato, cucumber, pepper, onion and pita in a bowl. Stir in dressing and season with salt and pepper.
