Ingredients

  • FOR THE SALAD:
  • Olive Oil, As Needed
  • 1 Gluten Free Pita, Cut Into Cubes
  • 2 Ripe Tomatoes, Sliced
  • 1/2 Cucumber, Diced
  • 1 Pepper, Sliced
  • 1/2 Red Onion Finely Sliced
  • Salt And Pepper, For Seasoning
  • FOR THE DRESSING:
  • 1 clove Garlic, Minced
  • 2 Tablespoons Lemon Juice
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Fresh Parsley, Chopped

Method

  • Heat a drizzle of olive oil in a frying pan over a medium heat. Fry pita squares until golden brown. Set aside to cool.
  • Make the dressing by whisking garlic, lemon juice, olive oil and parsley.
  • Place tomato, cucumber, pepper, onion and pita in a bowl. Stir in dressing and season with salt and pepper.
