Ingredients
- 1 (12 oz.) can Shoe Peg corn, drained
- 1/2 c. diced green pepper
- 2 Tbsp. chopped pimento
- 1/2 c. chopped celery
- 1/2 c. chopped red onion
- 1 c. diced cucumber
- 1/3 c. oil
- 3 Tbsp. sugar
- 1 1/2 tsp. salt
- 3 Tbsp. red wine vinegar
Method
- Combine all the vegetables.
- Mix oil, sugar, vinegar and salt. Stir until sugar dissolves.
- Pour over vegetables and toss gently.
- Chill 8 to 10 hours.
- Drain before serving.
