Ingredients

  • 3 Tbsp. olive oil
  • 1 large onion, cut up
  • 1 large zucchini, sliced
  • 1 medium green cabbage, cut up
  • 1 can kidney beans, rinsed
  • 5 medium tomatoes, cut up
  • 2 bay leaves
  • 1 red bell pepper, sliced
  • dill to taste
  • caraway seed to taste
  • salt to taste
  • water as needed
  • 8 oz. can tomato sauce
  • 1 1/2 to 2 lb. precooked Polish sausage, cut in bite size chunks

Method

  • Heat olive oil.
  • Saute onion, zucchini, cabbage, red bell pepper and tomatoes in olive oil.
  • Add bay leaves, kidney beans, dill, caraway seed, Polish sausage and tomato sauce.
  • Add water (about 1 cup).
  • Reduce heat to simmer after stew comes to a boil. Cook on very low heat for 1/2 hour or 45 minutes.
