Ingredients

  • 3 egg whites
  • pinch of salt
  • 6 Tbsp. sugar
  • 1/2 tsp. vanilla

Method

  • First, dissolve 1 tablespoon cornstarch in 2 tablespoons cold water in small saucepan.
  • Add 1/2 cup boiling water and cook over low heat, stirring constantly, until mixture thickens.
  • Remove from heat; let cool.
  • Beat egg whites until stiff.
  • Add sugar 1 tablespoon at a time, beating well after each.
  • Add salt, vanilla and cornstarch mixture.
  • Spread over pie, being sure to seal the edge.
  • Bake at about 350° for about 15 minutes.
