Ingredients
- 3 egg whites
- pinch of salt
- 6 Tbsp. sugar
- 1/2 tsp. vanilla
Method
- First, dissolve 1 tablespoon cornstarch in 2 tablespoons cold water in small saucepan.
- Add 1/2 cup boiling water and cook over low heat, stirring constantly, until mixture thickens.
- Remove from heat; let cool.
- Beat egg whites until stiff.
- Add sugar 1 tablespoon at a time, beating well after each.
- Add salt, vanilla and cornstarch mixture.
- Spread over pie, being sure to seal the edge.
- Bake at about 350° for about 15 minutes.
