Ingredients

  • 1 Large Onion
  • 1 Tablespoon Olive Oil
  • 3 cloves Garlic (Medium Size)
  • 3/4 cups Mayonnaise (I Used Mayo With Olive Oil)
  • 1- 1/2 cup Greek Yogurt (I Used Fat Free)
  • 1/2 teaspoons Kosher Salt (more If Desired)
  • 1/4 teaspoons Black Pepper (more If Desired)

Method

  • Slice onion in strips.
  • It really doesnt matter how you cut your onion as long as the pieces are not too large of pieces and they are approximately the same size so they will cook evenly.
  • Heat the olive oil in a saute pan over medium heat.
  • Add the sliced onion in an even layer and then toss to coat in oil.
  • Stir occasionally.
  • After 2 minutes, add the peeled, whole garlic cloves.
  • Continue to saute until the onions (and garlic) caramelize, about 15 minutes.
  • Remove from heat.
  • Combine remaining ingredients (mayonnaise, Greek yogurt, and salt and pepper) in a food processor or blender.
  • Give it a few pulses to combine.
  • Add the onions and garlic and pulse until thoroughly combined.
  • The onions and garlic will be a fine dice but still be in visible chunks.
  • Season with more salt and/or black pepper if desired.
  • Transfer to the refrigerator until you are ready to serve.
  • Serve chilled.
