Ingredients

  • 4 c. cooked, chopped chicken
  • 8 oz. shredded Cheddar cheese
  • 1 (16 oz.) can red kidney beans, drained
  • 1 medium onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 sweet red pepper, chopped
  • 1 pkg. taco seasoning
  • 1/2 c. sour cream
  • 1/2 c. mayonnaise
  • tortilla chips
  • 2 medium tomatoes, chopped

Method

  • Combine chicken, cheese, kidney beans, onion and chopped peppers.
  • In a small bowl, mix taco seasoning, sour cream and mayonnaise, blending well.
  • Pour over chicken mixture, stirring well.
  • Cover and chill 1 to 2 hours.
  • Garnish with chopped tomatoes.
  • Serve with tortilla chips.
