Ingredients

  • 3 Tbsp. olive oil
  • 1 c. onions, chopped
  • 1 clove garlic, minced
  • 1 (No. 2 1/2) can Italian tomatoes
  • 1 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. oregano
  • 2 lb. green beans
  • 1 bay leaf

Method

  • Heat the oil in a saucepan.
  • Add the onions and garlic; saute until soft, but not browned, about 5 minutes. Stir in the tomatoes (a No. 2 1/2 can is 3 1/2 cups), salt, pepper, oregano and bay leaf.
  • Bring to a boil.
  • Reduce the heat and simmer for 30 minutes.
  • Cut the beans in halves crosswise and add them.
  • (Use two packages frozen, if you wish.)
  • Cover and simmer for about 40 minutes or until beans are tender.
  • Transfer to a deep serving dish.
