Ingredients
- 3 Tbsp. olive oil
- 1 c. onions, chopped
- 1 clove garlic, minced
- 1 (No. 2 1/2) can Italian tomatoes
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. oregano
- 2 lb. green beans
- 1 bay leaf
Method
- Heat the oil in a saucepan.
- Add the onions and garlic; saute until soft, but not browned, about 5 minutes. Stir in the tomatoes (a No. 2 1/2 can is 3 1/2 cups), salt, pepper, oregano and bay leaf.
- Bring to a boil.
- Reduce the heat and simmer for 30 minutes.
- Cut the beans in halves crosswise and add them.
- (Use two packages frozen, if you wish.)
- Cover and simmer for about 40 minutes or until beans are tender.
- Transfer to a deep serving dish.
