Ingredients
- 1 c. scalded milk
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 3 Tbsp. oil or shortening
- 1 pkg. dry yeast
- 1/4 c. warm water
- 1 egg, beaten
- 3 c. flour
Method
- Mix milk, salt, sugar and shortening.
- Cool to lukewarm. Dissolve yeast in warm water; add beaten egg.
- Blend with lukewarm mixture.
- Add flour and knead until smooth on a floured board. Let rise in bowl until doubled.
- Knead.
- Rest 1 minute.
- Roll 1/4-inch thick.
- Cut into muffins.
- Place on a cookie sheet covered with 1/4 cup cornmeal; top with cornmeal.
- Cover and let rise until doubled.
- Cook on medium hot ungreased griddle for 8 to 12 minutes on each side.
- Cool on rack.
