Ingredients

  • 1 c. scalded milk
  • 1/2 tsp. salt
  • 2 Tbsp. sugar
  • 3 Tbsp. oil or shortening
  • 1 pkg. dry yeast
  • 1/4 c. warm water
  • 1 egg, beaten
  • 3 c. flour

Method

  • Mix milk, salt, sugar and shortening.
  • Cool to lukewarm. Dissolve yeast in warm water; add beaten egg.
  • Blend with lukewarm mixture.
  • Add flour and knead until smooth on a floured board. Let rise in bowl until doubled.
  • Knead.
  • Rest 1 minute.
  • Roll 1/4-inch thick.
  • Cut into muffins.
  • Place on a cookie sheet covered with 1/4 cup cornmeal; top with cornmeal.
  • Cover and let rise until doubled.
  • Cook on medium hot ungreased griddle for 8 to 12 minutes on each side.
  • Cool on rack.
