Ingredients

  • 3 Tbsp. unsalted butter
  • 3 Tbsp. olive oil
  • 1/2 c. chopped scallion or onion
  • 2 celery stalks, chopped
  • 2 c. rice (uncooked)
  • 4 c. broth (chicken or clam)
  • 3/4 lb. asparagus or string beans
  • 1 lb. shrimp, peeled
  • 3/4 c. fresh or frozen peas
  • 1/2 c. Parmesan cheese
  • 1/2 c. fresh parsley, chopped

Method

  • Heat butter and oil in a 13 x 9-inch glass dish, uncovered, at full heat in microwave for 3 minutes.
  • Add scallions, celery, parsley and rice.
  • Stir.
  • Cook at full power 4 minutes.
  • Stir in broth.
  • Cook at full power for 12 minutes.
  • Add remaining vegetables and cook 12 more minutes.
  • Let sit for 10 minutes with loose cover.
  • Sprinkle with cheese and eat.
