Ingredients
- 2 cans enchilada sauce
- 2 cans chili (no beans)
- 1 can cream of mushroom soup
- 2 lb. ground beef
- 2 pkg. taco seasoning
- 12 tortillas
- 1 lb. grated Cheddar
- 1 onion, chopped
Method
- Mix enchilada sauce, chili and soup; simmer 10 minutes.
- Brown beef; drain and add taco seasoning with a little water.
- Simmer. Soften tortillas one at a time in sauce; fill with meat mix, onion and cheese.
- Roll and layer in a casserole dish.
- Mix leftover sauce and meat; pour over rolls.
- Add grated cheese.
- Bake at 350° until bubbly.
- Top with chopped green onions.
