Ingredients

  • 2 cans enchilada sauce
  • 2 cans chili (no beans)
  • 1 can cream of mushroom soup
  • 2 lb. ground beef
  • 2 pkg. taco seasoning
  • 12 tortillas
  • 1 lb. grated Cheddar
  • 1 onion, chopped

Method

  • Mix enchilada sauce, chili and soup; simmer 10 minutes.
  • Brown beef; drain and add taco seasoning with a little water.
  • Simmer. Soften tortillas one at a time in sauce; fill with meat mix, onion and cheese.
  • Roll and layer in a casserole dish.
  • Mix leftover sauce and meat; pour over rolls.
  • Add grated cheese.
  • Bake at 350° until bubbly.
  • Top with chopped green onions.
