Ingredients
- 2 Tbsp. margarine or oil
- 1 onion, chopped
- 1 clove garlic, minced
- 16 oz. can tomatoes
- 1 tsp. sugar
- 1 tsp. cumin
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1 tsp. chili powder
Method
- Saute onion and garlic in margarine or oil.
- Add remaining ingredients and simmer 30 minutes or 45 minutes.
- Pour over enchiladas.
- Just before baking, top with cheese.
- I use this sauce for chicken or beef enchiladas and for Spanish rice.
