Ingredients

  • 1 (12 oz.) pkg. regular Jimmy Dean sausage
  • 1/4 lb. fresh mushrooms, sliced
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 6 eggs
  • 3 Tbsp. sour cream
  • 1/4 to 1/3 c. Mexican tomato and yellow chili hot sauce (La Victoria Salsa Supreme)
  • 8 oz. Velveeta cheese, sliced
  • 8 oz. medium Cheddar cheese, sliced
  • 8 oz. Mozzarella cheese, sliced

Method

  • Saute crumbled sausage, mushrooms and onion with salt and pepper.
  • Drain very well on paper towels.
  • Combine eggs and sour cream in blender and blend for 1 minute.
  • Pour eggs in a greased 7 1/2 x 11-inch baking dish.
  • Bake at 400° for 8 to 10 minutes, until set in the middle.
  • Spoon hot sauce over eggs and add sausage mix, then layer the 3 cheeses, beginning with the Velveeta.
  • Casserole may be refrigerated or frozen at this point and baked later.
  • Bake, uncovered, at 300° for 45 minutes.
  • Remove from oven and let set 5 to 10 minutes before cutting and serving.
