Ingredients
- 1 lg. eggplant
- 1 tsp. paprika
- 1/2 tsp. turmeric
- 1/2 tsp. salt
- 1 tbsp. sugar
- 1 cup vegetable oil
Method
- Cut the eggplant crosswise to make 1/3-inch thick slices.
- Mix spices in 1/8 cup of water and rub it on each eggplant slices.
- Fry on a non-stick frying pan at medium heat; flip once after about 10 minutes.
- Sprinkle sugar just before the end of frying.
