Ingredients
- 2 large eggplant
- 2 Tbsp. margarine
- 1 or 2 chopped onions
- 1 beaten egg
- 2 Tbsp. (level) flour
- 2 Tbsp. milk
- 4 to 6 oz. grated cheese
- salt and pepper to taste
- 1/4 to 1/2 ??? each sage and allspice
- bread crumbs
Method
- Chop, boil, drain and mash eggplants.
- Saute onions in margarine and add to eggplant mixture.
- Mix in egg, flour and milk.
- Add cheese and spices.
- Place in greased baking dish.
- Add rest of cheese to top, then bread crumbs and dot with margarine. Bake at 350° for 30 to 45 minutes.
