Ingredients

  • 2 large eggplant
  • 2 Tbsp. margarine
  • 1 or 2 chopped onions
  • 1 beaten egg
  • 2 Tbsp. (level) flour
  • 2 Tbsp. milk
  • 4 to 6 oz. grated cheese
  • salt and pepper to taste
  • 1/4 to 1/2 ??? each sage and allspice
  • bread crumbs

Method

  • Chop, boil, drain and mash eggplants.
  • Saute onions in margarine and add to eggplant mixture.
  • Mix in egg, flour and milk.
  • Add cheese and spices.
  • Place in greased baking dish.
  • Add rest of cheese to top, then bread crumbs and dot with margarine. Bake at 350° for 30 to 45 minutes.
