Ingredients
- 2 c. stewed eggplants
- 1 egg
- 1/3 c. onion
- 1/2 c. milk
- 1 c. flour
- 1 1/2 tsp. baking powder
Method
- Drain eggplant from juice.
- Mix eggplant, egg and onion until sticky.
- Stir flour and baking powder into milk; stir in eggplant mixture.
- Form into patties or drop with spoon into hot Crisco. Fry until golden brown, about 3 to 5 minutes.
