Ingredients

  • 2 lb. eggplant, cubed
  • 1 Tbsp. parsley
  • 3 to 4 eggs
  • 1 small clove garlic, minced
  • 1/4 c. grated cheese
  • 2/3 c. bread crumbs
  • 1/2 tsp. salt and pepper
  • 1/2 c. oil for frying

Method

  • Place cubed eggplant in saucepan with enough water to cover. Heat until water comes to a boil, then cook 3 to 5 minutes.
  • Place eggplant in a bowl and add cheese, bread crumbs, parsley, garlic, salt, pepper and eggs.
  • Blend well.
  • In a skillet, add the oil and heat. Drop eggplant mixture by spoonful in pan to size of hamburg. Fry on both sides and add more oil as needed.
