Ingredients
- 2 lb. eggplant, cubed
- 1 Tbsp. parsley
- 3 to 4 eggs
- 1 small clove garlic, minced
- 1/4 c. grated cheese
- 2/3 c. bread crumbs
- 1/2 tsp. salt and pepper
- 1/2 c. oil for frying
Method
- Place cubed eggplant in saucepan with enough water to cover. Heat until water comes to a boil, then cook 3 to 5 minutes.
- Place eggplant in a bowl and add cheese, bread crumbs, parsley, garlic, salt, pepper and eggs.
- Blend well.
- In a skillet, add the oil and heat. Drop eggplant mixture by spoonful in pan to size of hamburg. Fry on both sides and add more oil as needed.
