Ingredients
- 1 medium eggplant, peeled and sliced
- 1 c. stewed tomatoes
- 1 c. bread crumbs
- salt and pepper to taste
- oregano to taste
- 1 c. tomato sauce
- 3/4 c. Cheddar cheese, grated
- 3 Tbsp. Parmesan cheese
Method
- Simmer eggplant in pan of boiling salted water for 10 minutes. Drain.
