Ingredients
- 2 small or 1 medium eggplant
- 1 egg
- 1 c. milk
- 1/2 c. flour
- 1 c. olive oil
- 1 c. tomato sauce
- 1/2 c. freshly grated Parmesan cheese
- 1 c. Mozzarella cheese
Method
- Peel eggplant and slice.
- Prepare batter by mixing egg, flour and milk.
- Dip eggplant in batter. Fry in oil until brown. Drain well.
