Ingredients
- 4 small eggplants, peeled and chopped
- 1/2 small can evaporated milk
- 2 large eggs, slightly beaten
- 2 tsp. vanilla
- 2 tsp. baking powder
- 6 or 7 heaping Tbsp. flour
- enough oil for frying
Method
- Boil, drain, then mash eggplants.
- Add all remaining ingredients and mix well.
- Drop by large spoonfuls in hot oil and fry until golden.
- Drain on paper towel.
- Serve warm.
