Ingredients
- 1 c. cooked eggplant, drained
- 1 c. grated cheese (sharp)
- 3 c. corn flakes
- 2 hard-boiled eggs, chopped
- 2 Tbsp. butter
- salt and pepper to taste
- 1 small bell pepper, chopped (optional)
Method
- Crush corn flakes and mix with other ingredients.
- Put in greased baking dish and bake until cheese is melted and casserole is heated thoroughly.
- Top with grated cheese.
- Serves 6.
