Ingredients

  • 3 eggs, separated
  • 3/4 c. evaporated milk
  • 3/4 c. homogenized milk
  • 2 1/2 Tbsp. flour
  • 1 Tbsp. nutmeg
  • 1 1/2 tsp. vanilla
  • 2 Tbsp. butter
  • 1 1/4 c. sugar
  • 1/2 tsp. salt
  • 1 unbaked pie crust

Method

  • Separate eggs.
  • Mix all ingredients in mixing bowl, excluding egg whites.
  • Beat egg whites and fold into mixture.
  • Pour mixture into unbaked pie crust.
  • Bake at 400° for 15 minutes, then at 375° for an additional 15 minutes.
  • Turn oven off; let pie stay in oven for 5 minutes.
  • Chill and serve.
  • Refrigerate any leftovers.
