Ingredients

  • 2 1/2 tbsp butter
  • 1 tbsp olive oil
  • 1 None leek, trimmed, sliced
  • 6 slices bacon, chopped
  • 1 sheet frozen pie dough, thawed
  • 1 None large tomato, sliced
  • 1 oz grated Cheddar cheese
  • 4 None large eggs
  • None None chopped fresh parsley, to serve
  • None None salad, to serve

Method

  • Preheat oven 350°F. Line a baking tray with parchment paper.
  • In a large frying pan, melt butter and oil over high heat. Saute leek for 1-2 mins, until tender. Add bacon and cook for 2-3 mins, until starting to brown. Set aside.
  • Place pie dough on prepared baking tray. Trim into a round disc. Top with sliced tomato and cheese, leaving a 1 inch border. Spread leek mixture over top. Fold up edges, pleating, to enclose filling.
  • Break eggs carefully on top of filling. Bake for 20-25 mins, until egg is set. Sprinkle with parsley. Serve with salad.
