Ingredients

  • 1 cup Edamame, Shelled
  • 1 cup Avocado, diced
  • 1 Lime, Juiced
  • 1 cup Tomatoes, Finely Diced
  • 1 cup Red Onion, Finely Diced
  • 1 whole Jalapeno, Finely Diced
  • 1 Huge Handful Of Cilantro, Roughly Chopped
  • Salt And Pepper, to taste

Method

  • Cook the edamame according to package directions.
  • Add the avocado, edamame, lime juice, and a pinch of salt and pepper to a small food processor.
  • Pulse until combined and a desirable consistency.
  • Scoop mixture into a container.
  • Add the tomato, onions, jalapeno, and cilantro to the container.
  • Stir to combine the rest of the ingredients.
  • Taste and season if needed.
  • Keep refrigerated, unless you are eating the dip!
