Ingredients

  • 1/3 c. water
  • 1 x onion, minced
  • 1 x green bell pepper, minced
  • 1/2 tsp bottled chopped garlic
  • 30 ounce canned fat-free vegetarian baked beans (2 15-oz cans)
  • 15 ounce canned garbanzo or possibly black beans, liquid removed and rinsed
  • 15 ounce canned minced tomatoes
  • 2 c. minced chicken-style seitan
  • 2 Tbsp. Dijon-style mustard
  • 1/2 tsp grnd cumin
  • 1/4 tsp crushed red pepper freshly grnd black pepper to taste

Method

  • Preparation Time: 15 min
  • Cooking Time: 20 min
  • Servings: 6
  • Place water in a large saucepan with the onion, bell pepper and garlic.
  • Cook, stirring occasionally, for 5 min.
  • Add in remaining ingredients, bring to a boil, reduce heat and cook uncovered over low heat for 15 min.
  • Serve over whole grains, baked potatoes, or possibly in a bowl by itself.
