Ingredients

  • 1 1/2 cups flour, all-purpose
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup vegetable shortening
  • 1 cup brown sugar packed
  • 1 cup sugar granulated
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups oats, quick cooking
  • 3/4 cup dates chopped
  • 1/2 cup raisins, seedless chopped
  • 1/2 cup pecans chopped
  • 3/4 cup chocolate bits
  • 1 x coconut
  • 1 x apricots dried
  • 1 x walnuts chopped
  • 1 x butterscotch chips etc.

Method

  • Preheat oven to 350F (180C).
  • In a medium bowl add all-purpose and whole wheat flours, baking powder and salt.
  • In a large bowl, cream shortening and sugars; blend in eggs and vanilla.
  • Beat well.
  • Add dry ingredients and mix well.
  • Add oats, fruit, nuts and chocolate bits; mix in thoroughly.
  • Dough will be crumbly.
  • Drop by teaspoonfuls onto greased cookie sheets, using fingers to shape together.
  • Bake at 350F (180C) about 12 minutes or until golden brown.
  • Remove to rack to cool.
