Ingredients
- 6 pared potatoes
- 1 tsp. fat
- 1/2 c. chopped onion
- 1 c. light cream
- 2 tsp. peanut butter
- 3/4 tsp. salt
- yellow food coloring
- 1 boiled egg, chopped
Method
- Boil potatoes until tender.
- Melt fat in saucepan and saute onions.
- Add cream, bring to a boil and simmer 10 minutes.
- Add peanut butter, salt and a few drops of food coloring while stirring.
- Pour over cooked, drained potatoes; garnish with chopped egg.
- Serve with chicken or roast and lettuce salad. Serves 4.
