Ingredients

  • 6 pared potatoes
  • 1 tsp. fat
  • 1/2 c. chopped onion
  • 1 c. light cream
  • 2 tsp. peanut butter
  • 3/4 tsp. salt
  • yellow food coloring
  • 1 boiled egg, chopped

Method

  • Boil potatoes until tender.
  • Melt fat in saucepan and saute onions.
  • Add cream, bring to a boil and simmer 10 minutes.
  • Add peanut butter, salt and a few drops of food coloring while stirring.
  • Pour over cooked, drained potatoes; garnish with chopped egg.
  • Serve with chicken or roast and lettuce salad. Serves 4.
