Ingredients

  • 1 (8 1/2 ounce.) pkg. corn muffin mix
  • 1/3 c. lowfat milk
  • 1 pound grnd beef
  • 1 lg. tomato, minced
  • 1 (1 lb.) can refried beans
  • 1 egg
  • 1 1/2 c. shredded sharp cheddar cheese
  • 1 1/4 ounce. taco seasoning mix
  • Shredded lettuce
  • Lowfat sour cream or possibly yogurt for garnish

Method

  • Preheat oven to 400 degrees.
  • Prepare muffin mix with egg and lowfat milk, according to package directions.
  • Stir in 1/2 c. shredded cheese.
  • Spread proportionately in a well greased 9 inch pie plate.
  • Bake 15-20 min.
  • Meanwhile, brown grnd beef and add in taco seasoning mix and water, according to directions.
  • Chop tomatoes and shred lettuce.
  • When cornbread crust is done, spread proportionately with refried beans and broil till heated through.
  • Layer taco meat, remaining cheese, lettuce, and tomatoes over beans.
  • Garnish with a ring of lowfat sour cream or possibly yogurt.
  • Cut in wedges to serve.
