Ingredients

  • 2 teaspoons olive oil
  • 36 peeled and deveined medium shrimp (about 1 pound)
  • 2 garlic cloves, minced
  • 1/2 cup thinly sliced green bell pepper strips
  • 1 medium red onion, quartered and thinly sliced crosswise
  • 1/2 lemon, thinly sliced
  • 1 1/2 cups water
  • 1/2 cup white vinegar
  • 1 tablespoon Old Bay seasoning
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon pickling spice
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 3 bay leaves

Method

  • Heat oil in a large nonstick skillet over medium-high heat. Add shrimp and garlic; saute 3 minutes or until shrimp begin to turn pink. Place shrimp in an 11 x 7-inch baking dish. Top evenly with bell pepper, onion, and lemon slices.
  • Combine water and next 7 ingredients in a small bowl; pour evenly over shrimp. Cover and marinate shrimp at least 24 hours. Remove shrimp from marinade with a slotted spoon, and serve with wooden picks.
