Ingredients
- 1/2 each: red pepper, green pepper and yellow pepper
- 2 Tbsp. olive oil
- 1/4 c. chopped basil leaves (fresh)
- 1/2 lb. cooked penne pasta
- 2 crushed or minced cloves garlic (optional)
- 1 tsp. red pepper flakes (optional)
Method
- Thinly slice the halves of peppers.
- Saute in 2 tablespoons of olive oil and garlic, if you choose, until tender-crisp.
- Toss with basil, cooked pasta and red pepper flakes for that extra oomph!
