Ingredients

  • 3/4 lb. mild or hot Italian sausage
  • 1 white onion, chopped
  • 1 clove garlic, minced or pressed
  • 1 (6 oz.) can tomato paste
  • 1 (14 oz.) can Italian-style thick and chunky sauce
  • 1 box penne pasta
  • olive oil

Method

  • In a large pot, bring salted water to a boil.
  • Add 1 to 2 tablespoons of olive oil, then cook noodles until done, approximately 12 to 15 minutes.
  • While noodles are boiling, in a large skillet, saute onion and garlic in 1 tablespoon olive oil. Add the sausage and fry until done.
  • Spoon off any fat drippings and discard.
  • Add paste and sauce to sausage mixture.
  • Lower heat and simmer 7 to 10 minutes.
  • Strain noodles and rinse in cold water as soon as they're done.
  • Toss everything together.
  • Serve with Parmesan, Cabernet Sauvignon and Italian bread.
  • Serves 4.
