Ingredients
- 3/4 lb. mild or hot Italian sausage
- 1 white onion, chopped
- 1 clove garlic, minced or pressed
- 1 (6 oz.) can tomato paste
- 1 (14 oz.) can Italian-style thick and chunky sauce
- 1 box penne pasta
- olive oil
Method
- In a large pot, bring salted water to a boil.
- Add 1 to 2 tablespoons of olive oil, then cook noodles until done, approximately 12 to 15 minutes.
- While noodles are boiling, in a large skillet, saute onion and garlic in 1 tablespoon olive oil. Add the sausage and fry until done.
- Spoon off any fat drippings and discard.
- Add paste and sauce to sausage mixture.
- Lower heat and simmer 7 to 10 minutes.
- Strain noodles and rinse in cold water as soon as they're done.
- Toss everything together.
- Serve with Parmesan, Cabernet Sauvignon and Italian bread.
- Serves 4.
