- 1/2 CUP BUTTER OR MARGARINE
- 1 EGG
- 2 TBS. LEMON JUICE
- 1/4 TEASPOON SALT
- FEW GRAINS CAYENNE PEPPER
Method
- MELT BUTTER IN TOP OF DOUBLE BROILER OVER HOT, NOT BOILING WATER.
- ADD EGG, LEMON JUICE, SALT AND CAYENNE. BEAT WITH ROTARY BEATER OR WIRE WHISK UNTIL MIXTURE IS THICK.
- REMOVE AT ONCE FROM HOT WATER. SERVE OVER EGGS OR VEGETABLES.
- MAKES 3/4 CUPS OF SAUCE.
