Ingredients
- 4 whole chicken breasts (about 4 lb.), skinned, halved lengthwise and boned
- 1/3 c. flour
- 4 slices bacon
- 1/4 c. honey
- 2 Tbsp. prepared mustard
- 1/2 tsp. salt
- 1/2 tsp. curry powder
Method
- Rinse chicken, pat dry.
- Coat chicken with flour.
- Set aside. In large skillet, cook bacon until crisp.
- Drain bacon on paper towels, reserving drippings in skillet.
- Crumble bacon.
- Set aside. In same skillet, brown chicken on both sides about 10 minutes. Place chicken in 8 x 8 x 2-inch baking dish.
- Bake, uncovered, in 350° oven for 30 minutes.
- Meanwhile, combine honey, mustard, salt and curry powder.
- Drizzle honey mixture over chicken.
- Bake, uncovered, 15 minutes more.
- Top chicken with crumbled bacon. Serves 8.
