Ingredients

  • 4 whole chicken breasts (about 4 lb.), skinned, halved lengthwise and boned
  • 1/3 c. flour
  • 4 slices bacon
  • 1/4 c. honey
  • 2 Tbsp. prepared mustard
  • 1/2 tsp. salt
  • 1/2 tsp. curry powder

Method

  • Rinse chicken, pat dry.
  • Coat chicken with flour.
  • Set aside. In large skillet, cook bacon until crisp.
  • Drain bacon on paper towels, reserving drippings in skillet.
  • Crumble bacon.
  • Set aside. In same skillet, brown chicken on both sides about 10 minutes. Place chicken in 8 x 8 x 2-inch baking dish.
  • Bake, uncovered, in 350° oven for 30 minutes.
  • Meanwhile, combine honey, mustard, salt and curry powder.
  • Drizzle honey mixture over chicken.
  • Bake, uncovered, 15 minutes more.
  • Top chicken with crumbled bacon. Serves 8.
